Is there a way to replace the “Choose an option” text that appears at the top of a “single-choice-dropdown” component after opening the options? Screenshot for reference:
At this stage, one cannot override the text that appears on top of the list.

Yes, sure. We have gone ahead and added this on your behalf. We will update this question once more information on this feature becomes available.
Update: Since runtime version 4.84.0, it is possible to override the “Choose an option” text using the dialog-title attribute. See the documentation here.
